Description
A rich and indulgent festive treat made with IREKS Brownie Mix, this Crunchy Brownie Yule Log is filled with whipped Mirabella and crunchy Hector's Honeycomb pieces before being coated in smooth Coverdecor and finished with a dusting of icing sugar. Combining decadent chocolate flavour with a delicious honeycomb crunch, it's a standout addition to any Christmas dessert offering.

Method
Spread evenly into a lined baking tray and bake at 180°C for 20–25 minutes.
Allow the brownie to cool completely.
Break the baked brownie into pieces and place into a mixer fitted with a paddle attachment.
Mix until the brownie forms a soft, mouldable dough.
Roll the brownie dough out between two sheets of baking paper into a rectangle.
Whip the Mirabella until light and fluffy, then fold through the crushed Hector's Honeycomb.
Spread the Honeycomb Mirabella filling evenly over the brownie sheet.
Carefully roll into a Yule Log shape and chill until firm.
Coat the Yule Log with melted Coverdecor and allow it to set.
Finish with a dusting of icing sugar and decorate as desired.
Slice and serve.
