Macphie Bun Concentrate Make Up Instructions

Macphie Bun Concentrate is a paste product which requires only the addition of flour, yeast, water and fruit, if desired, to make a wide range of bun goods of varying qualities. Macphie Bun Concentrate is suitable for both bulk fermentation and no time doughs. Products made from Macphie Bun Concentrate will lend themselves to deep freezing and retarding.


  • Use water tempered to give a final dough temperature of 27ºC (80ºF).

  • Conventional Mixer - 10-15 minutes on middle speed. Spiral Mixer - 2 minutes on slow speed and 6 minutes on fast speed. High Speed Mixer - 2-3 minutes (11 watt Hours per kg of dough).

  • Bulk Fermentation - not necessary although if required it should not exceed 45 minutes and the yeast level must be reduced, or adjusted, to suit the desired fermentation time.

  • Prove at 40ºC (104ºF) R.H. 85% for 45-55minutes.

  • For a 50g (1¾oz) unit, bake at 220º-232ºC (430º-450ºF) for 12-15 minutes.
