Method
Place all ingredients into 5 Quart Hobart and blend together on 1st speed for 1 minute.
Scrape down, mix on 2nd speed for 6 minutes.
Add fruit then mix for 1 minute on 1st speed.
Deposit batter 1kg into 2 loaf tins sprayed with Trennwax and place on baking tray.
Bake at 340°F for 60 - 80 minutes
