  • Mix Mella Brioche, yeast and water for 2+10 minutesĀ 

  • Dough temperature: 27-28ā°C

  • Add cheese and garlic on slow

  • 20 minutes bulk fermentationĀ 

  • Scale and proof approx. 75 minutesĀ 

  • Make up Crossing Mix as per instructions and then pipe onto bunsĀ 

  • Bake at 190ā°C (375ā°F) for approx. 14 minutes
