Orange & Black Halloween New York Style Bagels Made using Carr's flour, these vibrant orange and black New York style bagels offer the perfect chewy texture and authentic New York-style bite. Filled with smooth cream cheese, smoked salmon and fresh rocket, they're a simple yet striking Halloween savoury that's ideal for cafés, bakeries and seasonal grab-and-go display

Method

1. Place all bagel ingredients into a mixer fitted with a dough hook.

2. Mix for 2 minutes on slow speed, followed by 6 minutes on fast speed until a smooth, elastic dough is formed

3. Divide the dough into two equal portions. Colour one portion with orange food colouring and incorporate charcoal powder into the other until an even black colour is achieved.

4. Scale the dough into 100g portions.

5. Round each portion, flatten slightly and mould a hole in the centre to create the bagel shape.

6. Prove for 20 minutes at 40°C / 75% RH.

7. Place the proved bagels into rapidly boiling water for 1½ minutes on each side.

8. Remove from the water, place onto a lined baking tray and sprinkle the orange bagels with black sesame seeds, if desired.

9. Bake at 200°C for approximately 25 minutes, until golden and fully baked.

10. Allow the bagels to cool completely before slicing in half.

11. Spread generously with cream cheese, then fill with smoked salmon and fresh rocket.

12. Serve immediately or package as a striking Halloween grab-and-go savoury option.
