Description
A bold take on a classic smash burger, served in a soft, buttery black brioche bun made using Mella Brioche Mix with activated charcoal. Filled with juicy smashed beef, melted cheese and your favourite burger toppings for a striking burger that's as impressive as it is delicious.

2. Increase to medium speed and continue mixing for 6–8 minutes, or until a smooth, soft and elastic dough is achieved.
3. Cover the dough and allow it to bulk ferment until doubled in size.
4. Divide the dough into equal portions (approximately 90–100g each) and shape into smooth, round buns.
5. Place the buns onto lined baking trays, leaving enough space between each one. Cover and allow to prove until doubled in size.
6. Lightly egg wash the buns and bake at 180°C for 12–15 minutes, or until fully baked. Transfer to a wire rack and allow to cool completely.
7. Slice the brioche buns in half and lightly toast the cut sides until golden.
8. Form beef mince into loose balls and place onto a hot flat-top grill or griddle. Smash each ball with a burger press to create a thin patty and cook until a crisp crust forms
9. Flip the burgers, top with American cheese and cook until the cheese has melted.
10. Assemble the burgers by spreading your chosen sauce onto the toasted brioche buns, then add shredded lettuce, the cheesy smash burger patties, pickles and sliced onions. Finish with the top bun and serve immediately with your choice of sauce.
