Description
Soft, moist muffins filled with sweet blueberry fruit filling, topped with smooth buttercream and finished with fresh blueberries. A classic, comforting bake perfect for any occasion.
Ingredients
350g
Whole Egg
280g
Water
50g
Blueberries
Method
- Add all the ingredients into an electric mixer and mix on a medium speed for 5-7 minutes.
- Add the mixture into muffin cases
- Press the upper surface approx. 1 cm deep using an oiled scraper or spatula.
- Place the muffin cases into a preheated oven
- (180 ̊ C) and bake for initially 5 minutes.
- Finish baking with open damper for 20-25 minutes.
- Once cooled, fill a piping bag with the blueberry filling
- Insert the piping bag into each muffin to inject the filling
- Pipe the Macphie Buttercream on top
- Place 2 blueberries on top to decorate
