Description
Light, fluffy and full of flavour, these Cheese & Scallion Hot Cross Scones feature mature cheddar, fresh scallions and a traditional piped cross, baked to a golden finish and best enjoyed warm with butter.
Ingredients
100g
Buttermilk
50g
Cheddar Cheese
50g
Whole Egg
50g
Scallion
30g
Water
Method
- Mix together flour, baking powder, baking soda, and salt in bowl.
- Rub in the room temperature butter until a breadcrumb texture.
- Add cheese and scallions then mix through thoroughly.
- Add in egg and buttermilk and mix thoroughly (the dough should be slightly sticky.
- Roll out dough on a floured surface to around 2 cm thick.
- Cut out medium sized rounds 6cm diameter and transfer to a lined baking tray.
- Mix together the 50g flour and 30g water to make a paste- transfer to a piping bag.
- Create and indent in the scones in a cross formation then pipe in the flour water mix.
- Brush with egg wash.
- Transfer tray to oven and bake for 10- 15 mins at 220oc until golden brown.
